There are so many great healthy foods out there and so many yummy ways to fix them. This is one of my favorites. Here is what you will need.
2 cups of whole grain rice
1 Large Zucchini chopped
2 Squash chopped
1/2 container of grape tomatoes halved
1 Carrot sliced
1 package of pre sliced mushrooms
1 can of fire roasted diced tomatoes
garlic salt, salt, pepper, spray butter and cooking spray.
Cook rice according to package.
In a large frying pan spray the bottom with Pam or whatever kind you have. Turn on medium and add in your zucchini, squash, carrots, tomatoes, mushrooms, diced tomatoes and sprinkle with garlic salt, salt and pepper. Add a few sprays of butter. Cook for about 15-20 minutes stirring frequently. Drain the rice then stir into the frying pan and you have a quick healthy meal! Enjoy!
