Here is what you will need:
1 package of Boca Grounds
1 package of reduced fat Mexican Cheese
2 green peppers chopped
2 tomatoes diced
1 can tomato sauce
1 cup of chopped onions
1 cup of uncooked rice
Okay cook your rice according to the package. In a frying pan spray with Pam and put in the boca crumbles and cook according to the package. You will then add your tomato sauce, chopped peppers and onions then the diced tomatoes. Cook for about 10 to 15 minutes. Preheat your oven to 350 and spray your casserole dish. Mix your cooked rice in and then transfer half into the casserole dish. Sprinkle half of the package of cheese then add the remaining amount and top with the other half of the cheese. Put this in the oven for about 10 minutes and it is time to eat!
